Chocolate Buds

Milk Chocolate buds

Chocolate buds are not only a great treat to eat – suitable for all ages, but also an important pantry item to always have on hand. They can be used in all manner of recipes that use chocolate and have a much richer flavour than standard cooking chocolate. Here are a couple of my own favourite recipes.

Chocolate Jelly
300ml cream
300ml milk
150g chocolate buds (any flavour, although the caramel might prove a bit too sweet)
15g gelatine

Place cream and milk in a saucepan and bring to the boil over medium heat, stirring.
Remove from heat, stir through chocolate until completely dissolved. Stir through gelatine. Pour into mould or bowl, refrigerate until set.

Chocolate Covered Strawberries
These luxurious treats are so easy to make and ideal for all sorts of occasions.

Melt some chocolate buds in a double boiler and then dip in the strawberries. The chocolate needs to set so place the chocolate strawberries on a waxed baking sheet in the fridge for half an hour.

To make the strawberries extra special melt some white chocolate and then dot on white chocolate seeds.
