One of our all time favourites are chocolate freckles, those round disks of milk chocolate covered in hundreds and thousands.
Here’s an interesting recipe using chocolate freckles:
4 cups toasted muesli with fruit
1 cup chopped pecan nuts
395ml tin sweetened condensed milk
1/2 cup smooth peanut butter
100g chocolate freckles
50g white chocolate, melted
1. Preheat oven to 160C, line base and sides of a 20x30cm slab pan with baking paper allowing an overhang along each long side.
2. Combine the muesli and nuts in a large bowl; melt the butter in a small saucpan over medium heat, remove from heat and stir in the condensed milk and peanut butter. Pour this mixture over the muesli mix and stir to combine. Press evenly into the base of the prepared pan and smooth the surface.
3. Bake for 25-30 minutes until golden and firm in the centre. Remove from the oven and while still hot, top with the chocolate freckles, gently pressing them into the surface to secure. Set aside to cool for about 2 hours.
4. Drizzle the top with melted white chocolate and refrigerate for 15-20 minutes until set, Cut into pieces to serve.
